You would do this just as you would any other mashed potatoes, boiling the sweet potatoes first and then mashing them up with an electric mixer or masher.

Try adding a little low fat milk or some plain Greek yogurt if you want as you whip them to give them a delicious consistency.

This is a great substitute at traditional holiday dinners as mashed sweet potatoes won’t impact blood glucose levels nearly as much as mashed regular potatoes would.

Sweet Potato Chips

Finally, the last way you might consider preparing your sweet potatoes is sweet potato chips.

These can be prepared by slicing the sweet potato as thin as possible and then following the same steps you would if you were making sweet potato fries.

Coat with a little olive oil and then place on a baking sheet lined with parchment paper.  Watch these as you bake them however to avoid burning.

It’s a delicious crunchy snack any time you need it.  You can use any spices or herbs you prefer with this snack as well, or consider making a chip dip using some plain Greek yogurt, low fat sour cream, and a little fresh dill for flavoring.
