Caribbean Grilled Scallop Salad
280g of scallops
½ tbsp. red pepper and garlic spice
4 slices pineapple
4 cups spinach leaves
¼ cup diced avocado
2 tbsp. fresh lime juice
1 tsp. olive oil
Rub the red pepper and garlic spice into scallops and then place on a grill for 3 minutes per side.
Remove and cover to maintain heat. Next, add pineapple and grill for 2 minutes per side.
Combine together the lime juice and olive oil. Toss together the spinach, pineapple, scallops, and avocado. Drizzle with lime juice mixture before serving.
