Enjoy a healthy, protein-rich seafood salad with Scallops

Scallops are one of the most overlooked protein sources that you should consider adding to your diet on an occasional basis.

As they are priced higher than many other fish or seafood options, you’ll likely want to treat yourself to them every once in a while.

High in protein and relatively low in fat, scallops are an excellent source of vitamin B12, iodine, phosphorus, selenium, zinc, as well as potassium.

Caribbean Grilled Scallop Salad

280g of scallops
½ tbsp. red pepper and garlic spice
4 slices pineapple
4 cups spinach leaves
¼ cup diced avocado
2 tbsp. fresh lime juice
1 tsp. olive oil

Rub the red pepper and garlic spice into scallops and then place on a grill for 3 minutes per side.

Remove and cover to maintain heat. Next, add pineapple and grill for 2 minutes per side.

Combine together the lime juice and olive oil.  Toss together the spinach, pineapple, scallops, and avocado. Drizzle with lime juice mixture before serving.
