If you’re tired of bland and boring salads however, you need to try this chicken mandarin based salad. It offers a sweet taste and provides you with a crunchy texture you’re sure to love.

The salad is quite well balanced, providing some lean protein thanks to the chicken along with some healthy fats due to the addition of the slivered almonds. 

You’ll also take in a few carbs from the oranges and cranberries, however with all the added fibre, you won’t have to worry about these spiking your blood glucose levels.

If you like, you could also swap out the mandarins and instead use blueberries, strawberries, or raspberries. All will work equally well with this dish.

Chicken Mandarin Spinach Salad

200-300grams of grilled chicken breasts, cut into small pieces
2 cups spinach leaves
½ cup mandarin orange slices
½ cup finely chopped broccoli
1 tbsp. dried cranberries
1 tbsp. slivered almonds
2 tbsp. vinegar
2 tbsp. fat free mayonnaise
2 tbsp. sugar or Splenda

Combine the vinegar, mayonnaise, and Spenda to form dressing. If too thick, you can add a little juice from the mandarin orange segments.

Next, toss together the remaining ingredients before drizzling with dressing. Toss one more time and then serve immediately.
