Chicken With Mushroom White Sauce
4 boneless, skinless chicken breasts
220g button mushrooms, thinly sliced
1 red pepper, diced
2 shallots (about 1/4 cup), finely minced
1/2 cup white wine (Optional)
1/2 cup chicken broth
1 cup full fat coconut milk
4 tbsp coconut oil
Salt and pepper to taste
Makes 4 servings
First heat a large non-stick pan over medium heat. Next, season chicken with salt and pepper. Add 3 tbps. coconut oil to the pan and then saute the chicken. Remove from the pan.
Add the shallots to the pan along with peppers and mushrooms and remaining coconut oil. Cook until tender.
Add in the white wine and chicken broth and then simmer to reduce for 5-10 minutes or until it’s reduced by about two thirds of the original volume.
Next stir in the coconut milk and then simmer until a sauce-like consistency is reached. Serve this over the chicken.
