Lemon Chicken Recipe

tbsp. olive oil
5 cloves minced garlic
¼ cup low sodium chicken broth
zest from one lemon
juice from one lemon
½ tsp. dried oregano
½ tsp. fresh thyme leaves
3 boneless chicken breasts
1 sliced onion
1 sliced carrot
salt and pepper to taste
sprigs of fresh thyme (to taste)
1 lemon

Begin by preheating your oven to 200 degrees.  Next, coat a baking dish with non-stick spray.

Begin to heat the olive oil in a skillet over medium heat.  Next, add garlic and cook for about 1 minute, stir constantly.

Add the broth, lemon zest and juice, along with spices. Heat for 30 seconds and then pour into the baking dish.

Add to the baking dish the chicken breasts and diced vegetables, sprinkling with salt and pepper.

Add in the lemon wedges and sprigs of thyme.

Bake for 30-40 minutes, basting every 10-15 minutes.  Remove from the oven and let stand 5-10 minutes prior to serving.
