Minestrone Soup

1 tsp. olive oil
1 cup sliced onion
2 tsp. chopped fresh oregano
2 garlic cloves, minced
2 cups butternut squash
2 cups sliced zucchini
½ cup chopped carrots
½ cup corn kernels
1 can diced tomatoes
4 cups low sodium chicken broth
1 cup spinach leaves
1 cup white beans
salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the onion, oregano, and garlic and cook for 2-3 minutes.

Next add the squash, zucchini, carrots, corn, diced tomatoes, and chicken broth, reduce heat, and simmer for 10-15 minutes or until vegetables are tender.

Add in the spinach leaves and beans, stir once again and then let stand for 1-2 minutes prior to serving.
