Low Carb Diets Don’t Have To Be Boring!
If you’re on a low carb diet but struggling to stay the course because you just can’t find anything good to eat, take comfort in knowing that you aren’t alone.
Many people do struggle with this upon first starting to go low carb, but fortunately, if you get creative, you can find many tasty solutions.
While some of these will still contain some carbs, as long as you aren’t on a very low carb diet, they should fit the bill perfectly.
Here are some great ideas to try.
The first thing you can consider is some crumbled cauliflower. This will be a great substitute for brown rice as it has a similar texture when prepared.
To make this dish, you’ll simply want to bake a cauliflower with as little moisture as possible until it is fully cooked.
Then, taking a carrot grater and on the largest setting, grate the cauliflower until small rice-like pieces begin to form.
Serve this however you would normally serve your cooked rice.
Butternut Squash Fries
The next option is to prepare butternut squash fries. If French Fries are a favorite for you, this can stand in perfectly.
Simply cube the butternut squash (or form into French Fry shape) and then coat with a little olive oil, herbs and spices, and salt.
Then, place on a lined backing tray and bake for 20 to 25 minutes at 220 Celcius, flipping halfway through.
Serve these with some low carb/low sugar tomato sauce if desired.
Squash is very nutrient dense and also rich in fibre, so this is actually a much healthier version – even if you aren’t low carb dieting – of French Fries.
If it’s pasta you’re craving as your side dish, once again, squash can come to the rescue. This time though, you aren’t using butternut squash but rather spaghetti squash.
When this squash type is baked, it’ll form strand-like pieces that resemble that of traditional spaghetti.
While it won’t be exactly like spaghetti, it’ll still give a relatively similar texture and feel in your mouth. Most people will find that it gets the job done.
Top this with your favorite healthy homemade turkey meatballs and tomato sauce and you’ll be all set.
Finally, the last great low carb side dish that you can prepare is grilled zucchini.
This one is great done on the barbeque or just your traditional grill and will provide a tasty texture that you’ll be sure to enjoy.
Brush the zucchini with a little olive oil before grilling and if desired, top with a light sprinkling of Parmesan cheese once it’s finished.
So next time you feel stuck and are looking for ideas on what you can make on your low carb diet, try one of these delicious side dish options.
If you are willing to get a little creative, you can certainly find ways to satisfy your craving without falling off your low carb diet plan.
