Vietnamese Lemongrass Chicken Stir-Fry Recipe
½ stalk finely chopped lemongrass
2 cloves garlic, chopped
1 tsp. low sodium soy sauce
1 tsp. fish sauce
½ sliced red bell pepper
1 sliced carrot
½ cup broccoli florets
½ cup mushrooms, sliced
1 tbsp. olive oil
300g. boneless skinless chicken breasts
Heat oil in a skillet over medium heat and then add in the garlic. Sauté and then begin to cook the meat.
After 2-3 minutes, add the vegetables and continue to sauté until almost tender. Stir in the soy sauce and fish sauce and then serve over a bed of brown rice.
